The first Junmai Daiginjo brewed in the 2023 sake brewing season and is made of California grown rice polished to 50%. The Platinum Limited Edition is different from the Platinum that is regularly available in our lineup. The Platinum Limited Edition is bottled within a week after filtration and has almost no storage time. It is also a draft (nama-chozo), meaning it undergoes heat treatment only one time instead of the regular two. These create a more fresh and fragrant sake. Ozeki USA brewmaster Kenta Horie is featured on the label and he says, "with all of the great care, precision and hard work of my team, we were able to create this beautiful Platinum Limited Junmai Daiginjo with notes of peach, pear and pineapples that we hope you’ll enjoy.
